strawberry, chicken & lettuce salad
This is another of my favorite salads. It has a delicious combination of flavors and textures, and is light, yet filling.

Ingredients
- FOR THE DRESSING (ENOUGH FOR 2:)
- 2 medium fresh strawberries, capped
- 1 tablespoon balsamic vinegar
- 3 tablespoons salad oil
- 2 teaspoons mayonnaise
- 1 teaspoon granulated sugar
- 1 pinch salt
- FOR EACH SALAD:
- 2 to 3 cups torn romaine and/or butter lettuce
- 1/3 cup shredded/chopped cooked chicken (roasted or grilled is best)
- 3 to 4 large fresh strawberries, sliced
- 1 teaspoon sunflower kernels (shelled seeds)
- 1 tablespoon bleu or feta cheese crumbles
How To Make strawberry, chicken & lettuce salad

Step 1Cut 2 strawberries into pieces and place in a small bowl or cup; use a fork to mash to a pulp.

Step 2Into a small jar, add balsamic vinegar, oil, mayonnaise, sugar, pinch of salt and mashed strawberries; screw lid onto jar; shake vigorously for several seconds; refrigerate until needed (up to 3 days.) Shake well before pouring.

Step 3Into each salad bowl, layer lettuce, chicken and sliced strawberries.

Step 4Sprinkle with sunflower kernels; sprinkle with cheese.

Step 5Shake salad dressing very well; pour desired amount over salad (up to 1/2 of the dressing.)

Step 6Serve immediately. Cover and refrigerate leftovers.
