strawberry, chicken & lettuce salad

This is another of my favorite salads. It has a delicious combination of flavors and textures, and is light, yet filling.

Ingredients

  • FOR THE DRESSING (ENOUGH FOR 2:)
  • 2 medium fresh strawberries, capped
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons salad oil
  • 2 teaspoons mayonnaise
  • 1 teaspoon granulated sugar
  • 1 pinch salt
  • FOR EACH SALAD:
  • 2 to 3 cups torn romaine and/or butter lettuce
  • 1/3 cup shredded/chopped cooked chicken (roasted or grilled is best)
  • 3 to 4 large fresh strawberries, sliced
  • 1 teaspoon sunflower kernels (shelled seeds)
  • 1 tablespoon bleu or feta cheese crumbles

How To Make strawberry, chicken & lettuce salad

  • Step 1
    Cut 2 strawberries into pieces and place in a small bowl or cup; use a fork to mash to a pulp.
  • Step 2
    Into a small jar, add balsamic vinegar, oil, mayonnaise, sugar, pinch of salt and mashed strawberries; screw lid onto jar; shake vigorously for several seconds; refrigerate until needed (up to 3 days.) Shake well before pouring.
  • Step 3
    Into each salad bowl, layer lettuce, chicken and sliced strawberries.
  • Step 4
    Sprinkle with sunflower kernels; sprinkle with cheese.
  • Step 5
    Shake salad dressing very well; pour desired amount over salad (up to 1/2 of the dressing.)
  • Step 6
    Serve immediately. Cover and refrigerate leftovers.
