This light and refreshing salad is different, in that it is both sweet and tart with delicious garlic, and tomato undertones. Starfruits are sweet and tart and very juicy. They are native home grown all over south Florida. A homemade vinegrette is prepared and poured over everything. Enjoy

Ingredients

  • 1 large fresh rinsed green leaf lettuce, torn in pieces
  • 5 large radishes sliced thin
  • 1 large whole ripe tomato sliced in quarters and then the quarters sliced again
  • 1/2 medium sweet onion sliced thin
  • 2 medium large ripe starfruits sliced
  • - lemon/lime honey vinegrette
  • 2 cloves fresh minced garlic, minced fine
  • 1 large lemon, juiced
  • 1 large lime, juiced
  • 2 tablespoons honey
  • 1/4 cup light olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

How To Make starfruit salad, ensalada de carambola

  • Step 1
    Rinse, spin dry if possible leaf lettuce, tear in pieces. Add the radishes, onion, tomatos,and starfruit.
  • Step 2
    Next in a medium bowl add the juice of the lemon and lime. Add to this the honey, minced garlic, salt and pepper. With a wire wisk, wisk real well then add the olive oil in a light stream wisking until well incorporated into the lemon/lime juice.
  • Step 3
    Pour the vinegrette over the salad toss well and serve. Check for salt and pepper seasoning. Enjoy.
