This recipe is a staple at our Tables of Eight dinners. Everyone loves the sweet with the tart flavors.

Ingredients

  • 1/4 cup minced onion or 1 tbsp. dried minced onion
  • 3 tablespoons cider vinegar
  • 3 tablespoons white wine vinegar
  • 2 tablespoons sesame seeds
  • 1/4 teaspoon paprika
  • 3 tablespoons sugar (divided)
  • 1/2 cup olive oil
  • 2 tablespoons butter
  • 3/4 cup blanched slivered almonds
  • 1 to 1-1/2 packages ready-to-use baby spinach leaves
  • 2 medium red skinned apples, quartered, cored, & thinly sliced

How To Make spinach and apple salad with crispy almonds

  • Step 1
    Combine onion, vinegars, sesame seeds and paprika in a small bowl. Mix in 2 Tbsp. sugar. Gradually whisk in olive oil. Season with salt and pepper.
  • Step 2
    Melt butter in a heavy skillet over medium heat. Add almonds and stir until they begin to color about 2 minutes. Sprinkle remaining 1 Tbsp. sugar over the almonds and stir until they turn golden, about 2 minutes longer. Transfer almonds to a bowl and cool. Break up almonds as they cool if they begin sticking together. (Dressing and almonds may be prepared several hours ahead. Cover separately and let stand at room temperature.)
  • Step 3
    Combine spinach and apples in a large bowl. Toss with dressing. Mix in almonds.
