Okay yeah I know people tend to wrinkle their nose when it comes to pasta & fruit salad. Sounds weird, but this recipe is sooooo worth the wrinkled noses of those you tell. Absolutely delicious and far beyond what i ever expected. My family made me promise to call them when i make it so they can come over and have some. lol I have found that Rosa Marina is also called Orzo depending on where you live. In NY it was Rosa Marina and in North Carolina it's Orzo. It is basically pasta that looks like large pieces of rice.

Ingredients

  • 12 ounces rosa marina pasta (orzo)
  • 3/4 cup sugar, white
  • 2 tablespoons flour, all-purpose
  • 2 - eggs
  • 1/2 teaspoon salt
  • 15 ounces pineapple, crushed
  • 11 ounces mandarin oranges
  • 8 ounces whipped topping, thawed
  • OPTIONAL
  • 1 jar maraschino cherries

How To Make rosa marina salad

  • Step 1
    Prepare Rosa Marina (Orzo) as directed.
  • Step 2
    Drain pineapple and oranges, reserving liquid in a small sauce pan.
  • Step 3
    Add sugar, flour, eggs and salt to the sauce pan and cook on medium heat until thickened. Make sure you stir it constantly so it doesn't scorch or stick.
  • Step 4
    Rinse pasta with cold water after draining.
  • Step 5
    Turn pasta into a large bowl and mix with the hot fruit juice sauce, then refrigerate at least 4-6 hours (preferably overnight to allow the sauce to flavour the pasta).
  • Step 6
    After sitting, add fruit and whipped topping and mix well.
  • Step 7
    Optional: You can add Marachino Cherries as a garnis if you wish, but i find that it's better without them.
