pineapple salad

Where Mom came up with this salad, we will never know. She can't seem to remember. But it's so simple and fresh you can't help but love it on a hot summer evening. It's great with a steak dinner, meatloaf or chicken. I love it for lunch when its hot and I want something light. It's different but everyone who's tried it is pleasantly surprised and asks for more.

Ingredients
- 2 cups shredded lettuce, divided
- 1 can sliced pineapple in juice
- 1 cup grated cheddar cheese (mild)
- 1 tablespoon sugar
- 1 cup miracle whip salad dressing or mayo
How To Make pineapple salad

Step 1Drain pineapple and reserve juice.

Step 2On four salad plates arrange 1/2 cup shredded lettuce

Step 3Lay out two pineapple rings overlapping on lettuce.

Step 4Sprinkle 1/4 cup of cheese on each plate.

Step 5Combine Miracle Whip and sugar; whisk in pineapple juice until dressing is creamy but not too thin not too thin. (About the consistency of french dressing) **Mayo can be used but add more sugar to taste.

Step 6Drizzle dressing over salad. *Fresh strawberries or maraschino cherries can be used as garnish. **Canadian Bacon chopped can be added as well. Layer between pineapple and cheese. ***Leftover dressing can be stored in an airtight container for up to a week and is great as a dressing for fruit or a wedge salad.
