Placing the onions in ice water removes some of the bite and makes them crunchier. This salad is so fresh and tastes great with the sweet spicy Vinaigrette

Ingredients

  • 1/4 red onion cut into very thin slices
  • 2 cups mixed salad greens
  • 2 large oranges
  • 1 medium cucumber peeled and thinly sliced
  • 2 tablespoons cilantro chopped
  • VINAIGRETTE
  • 4 tablespoons fresh orange juice
  • 1/2 teaspoon orange zest
  • 2 1/2 tablespoons white wine vinegar
  • 2 teaspoons sweet smoked paprika
  • 1 teaspoon sugar
  • 2 drops of hot sauce
  • salt
  • 2/3 cup good quality olive oil

How To Make orange salad w orange-smoked paprika vinaigrette

  • Step 1
    Mix all ingredients for vinaigreete except oil together. Then whisk in the olive oil a little at a time until well incorporated. Set aside. Place red onion is a bowl and pour ice water over top and let sit for at least 30 minutes. Cut the top and bottom off the oranges and standing them upright cut with a sharp knife removing the peeling and white plith. Slice the oranges into thin rounds.
  • Step 2
    To build the salad. Add the greens to 4 plates. Drain the onions and dry with paper towels. Top the greens with the onions then the cucumber and cilantro. Add the orange slices.
  • Step 3
    Mix the vinaigrette again and pour over salad
