olive and orange salad

An intresting and refreshing salad. The anchovies melt and no one will be able to see them - but it gives this salad its unique flavor...trust me no one will know that anchovies were used.

Ingredients

  • 4 large oranges
  • 10 - anchovies
  • 1 medium red onion chopped
  • 20 - pitted kalamata olives sliced
  • 1 bunch basil leaves torn
  • 1/4 cup olive oil, extra virgin
  • - salt and pepper

How To Make olive and orange salad

  • Step 1
    Slice the skin off each orange, removing both the peel and the white skin or pith. Coarsely chop the oranges and reserve.
  • Step 2
    Place the chopped oranges, orange juice from the oranges, anchovies, onion, olives, and basil leaves in a salad bowl. Drizzle with extra-virgin olive oil and season with salt and pepper. Toss well and serve
