My Family's Favorite Salad

Ingredients

  • 2 - ripe pears, peeled and sliced thinly (peeled is how my family likes it; if yours doesn’t mind, the peeling is fine)
  • 1 package spinach, washed and de-stemmed
  • 1/3 cup dried cherries (dried cranberries are a good substitute)
  • 1/2 cup pecans, roasted and chopped
  • 1/2 cup freshly squeezed citrus juice (1 lemon and 1-2 oranges)
  • 3/4 cup good olive oil
  • 2 teaspoons dijon mustard
  • 2 teaspoons local honey
  • 1 1/2 tablespoons champagne or white wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces crumbled goat cheese (optional) i serve this onthe side so those who don't want the cheese don't have to eat it.

How To Make nell’’s superb spinach, pear, and dried cherry salad with citrus vinaigrette

  • Step 1
    In a small bowl, whisk together the citrus juice, olive oil, honey, vinegar, salt, and pepper. Taste dressing and correct to taste. Pour half of dressing over pears in bottom of salad bowl. Add spinach and cherries, but DO NOT STIR until ready to serve. Refrigerate. When ready to serve, remove from refrigerator, stir thoroughly, add pecans and serve.
