melon and goat cheese salad
I often throw this refreshing fruit salad together in the summer when melons are at their peak of sweetness. It's super simple and quick. It's very versatile and you can use any fresh fruits you like along with the melon. I love it so much I make it just for me and I think it would pair perfectly with a chicken salad croissant for a refreshing lunch

Ingredients
- 4-5 cups cantaloupe, cubed
- 4-5 cups watermelon, cubed
- 1/2 cup fresh dark sweet cherries, halved and pitted
- 1 cup fresh or frozen blueberries
- 4-5 ounces honey goat cheese, crumbled
- 2-3 tablespoons honey
- 2 tablespoons mint, chopped, fresh
- 2 teaspoons poppy seeds
How To Make melon and goat cheese salad

Step 1Start with cold fruits. Toss all fruits together in a large bowl.

Step 2Add goat cheese, mint, 1 tbsp of honey and poppy seeds. Toss again.

Step 3Just before serving drizzle with remaining honey and additional mint for garnish.
