Marinated Melon and Strawberries with Honey Ginger Cream

ripe melon, cut into chunks or balls
2 c
fresh strawberries
1/2 c
orange juice
2 Tbsp
brown sugar
1 c
lowfat sour cream or fresh plain yogurt
3 Tbsp
3 Tbsp
crystallized ginger, finely chopped
fresh mint leaves (garnish)


1Place melon chunks and strawberries in a large shallow dish.
2Combine orange juice and brown sugar and pour over fruit.
3Marinate mixture in the refrigerator for at least 2 hours.
4Combine sour cream, honey and ginger in a small bowl and refrigerate for about 30 minutes.
5Spoon melons into individual serving bowls, and top with sour cream mixture.
6Garnish with fresh mint leaves.
