Ingredients
- 1 - ripe melon, cut into chunks or balls
- 2 cups fresh strawberries
- 1/2 cup orange juice
- 2 tablespoons brown sugar
- 1 cup lowfat sour cream or fresh plain yogurt
- 3 tablespoons honey
- 3 tablespoons crystallized ginger, finely chopped
- - fresh mint leaves (garnish)
How To Make marinated melon and strawberries with honey ginger cream

Step 1Place melon chunks and strawberries in a large shallow dish.

Step 2Combine orange juice and brown sugar and pour over fruit.

Step 3Marinate mixture in the refrigerator for at least 2 hours.

Step 4Combine sour cream, honey and ginger in a small bowl and refrigerate for about 30 minutes.

Step 5Spoon melons into individual serving bowls, and top with sour cream mixture.

Step 6Garnish with fresh mint leaves.
