Mamaw's "Mold"

Thanksgiving and Christmas were always wonderful times for our family for many years. My mother would always make her special "mold" made from lime Jello that all of the kids loved. My mom was diagnosed with severe dementia last year and hasn't been able to cook anymore for quite sometime. This Thanksgiving, I made two of her signature dishes; her rolls and this delicious mold that that my kids always loved. I hope that your family enjoys this delicious lime Jello mold as much as mine has.

1 large
package lime flavored jello
1 can(s)
mandarin oranges (small can)
1 can(s)
crushed pineapple, drained (20 ounce size)
8 oz
carton small curd cottage cheese
8 oz
tub cool whip whipped topping


1Mix jello according to package directions and refrigerate until partially set.
2Mix cottage cheese, cool whip, oranges and pineapple with hand mixer until well blended and orange sections are in small pieces. Mix with partially set Jello and return to refrigerator until completely set and Jello is firm. Serve cold.
3SPECIAL NOTE: You can also add in 1/2 cup chopped pecans if you'd like.
