Ingredients
- 3/4 pound chicken breast, roasted
- 1 - apple, Granny Smith, cored and diced into 1/2" pieces
- 1 - celery stalk, finely chopped
- 1 - mango, peeled and diced
- 2 tablespoons ginger, candied and minced
- cup mayonnaise, light
- cup sour cream, nonfat
- 2 tablespoons lime juice
- 2 tablespoons chutney, mango
- 1 teaspoon mustard, grainy
- 3 tablespoons walnuts, coarsely chopped
- 2 tablespoons mint, fresh minced
How To Make lighter chicken waldorf salad

Step 1Dice the cooked chicken; combine with the apple, celery, mango and candied ginger.

Step 2In a medium bowl, combine the mayonnaise, sour cream, lime juice, chutney and mustard; mix well.

Step 3Add to the salad, mixing well.

Step 4Cover and refrigerate until ready to serve.

Step 5Just before serving, stir in the chopped walnuts and mint.

Step 6NOTE: Candied or sugared ginger can be found in the Asian section of major supermarkets.
