3/4 lbchicken breast, roasted

1apple, Granny Smith, cored and diced into 1/2" pieces

1celery stalk, finely chopped

1mango, peeled and diced

2 Tbspginger, candied and minced

csour cream, nonfat

2 Tbsplime juice

2 Tbspchutney, mango

1 tspmustard, grainy

3 Tbspwalnuts, coarsely chopped

2 Tbspmint, fresh minced
How to Make Lighter Chicken Waldorf Salad
- Dice the cooked chicken; combine with the apple, celery, mango and candied ginger.
- In a medium bowl, combine the mayonnaise, sour cream, lime juice, chutney and mustard; mix well.
- Add to the salad, mixing well.
- Cover and refrigerate until ready to serve.
- Just before serving, stir in the chopped walnuts and mint.
- NOTE: Candied or sugared ginger can be found in the Asian section of major supermarkets.
