3/4 lb
chicken breast, roasted
apple, Granny Smith, cored and diced into 1/2" pieces
celery stalk, finely chopped
mango, peeled and diced
2 Tbsp
ginger, candied and minced
mayonnaise, light
sour cream, nonfat
2 Tbsp
lime juice
2 Tbsp
chutney, mango
1 tsp
mustard, grainy
3 Tbsp
walnuts, coarsely chopped
2 Tbsp
mint, fresh minced

How to Make Lighter Chicken Waldorf Salad


  • 1Dice the cooked chicken; combine with the apple, celery, mango and candied ginger.
  • 2In a medium bowl, combine the mayonnaise, sour cream, lime juice, chutney and mustard; mix well.
  • 3Add to the salad, mixing well.
  • 4Cover and refrigerate until ready to serve.
  • 5Just before serving, stir in the chopped walnuts and mint.
  • 6NOTE: Candied or sugared ginger can be found in the Asian section of major supermarkets.
