Ingredients

  • 3/4 pound chicken breast, roasted
  • 1 - apple, Granny Smith, cored and diced into 1/2" pieces
  • 1 - celery stalk, finely chopped
  • 1 - mango, peeled and diced
  • 2 tablespoons ginger, candied and minced
  • cup mayonnaise, light
  • cup sour cream, nonfat
  • 2 tablespoons lime juice
  • 2 tablespoons chutney, mango
  • 1 teaspoon mustard, grainy
  • 3 tablespoons walnuts, coarsely chopped
  • 2 tablespoons mint, fresh minced

How To Make lighter chicken waldorf salad

  • Step 1
    Dice the cooked chicken; combine with the apple, celery, mango and candied ginger.
  • Step 2
    In a medium bowl, combine the mayonnaise, sour cream, lime juice, chutney and mustard; mix well.
  • Step 3
    Add to the salad, mixing well.
  • Step 4
    Cover and refrigerate until ready to serve.
  • Step 5
    Just before serving, stir in the chopped walnuts and mint.
  • Step 6
    NOTE: Candied or sugared ginger can be found in the Asian section of major supermarkets.
