Light, fruity, good for a hot summer day! Try subbing other flavors of Jello ... raspberry is very good! [Borrowed photo ... will post my own when I re-make this].

Ingredients
- 1 package [6-oz] lemon jello
- 1 cup boiling water
- 1/2 cup half and half or light cream
- 1/2 teaspoon vanilla
- 1/2 cup sour cream
How To Make lemon sour cream mold

Step 1Dissolve jello in boiling water. Add half and half and vanilla; blend in sour cream. "Mixture will appear slightly curdled".

Step 2Chill until slightly congealed. Beat w/ electric mixer until mixture is smooth.

Step 3Pour into a 3-cup mold. Chill until firm, about 3 hours.

Step 4Unmold and serve or garnish with fresh fruit, if desired. Makes about 2-1/2 cups, or 5 servings.
