lemon-pineapple salad

I first found this recipe in one of Paula Deen's cookbooks. It is delicious.

Ingredients

  • 1 cup boiling water
  • 2 packages lemon gelatin
  • 1 can condensed milk
  • 1 cup mayonnaise
  • 1 can 20 oz crushed pineapple, drained reserve juice
  • 1 can 8 oz crushed pineapple, drained reserve juice
  • 1 cup sharp cheddar cheese
  • 1/2 cup chopped pecans

How To Make lemon-pineapple salad

  • Step 1
    Combine 1 C pineapple juice and 1 C water. Bring to a boil over medium-high heat. Remove from heat and add geletins, stirring until dissolved. Pour into large bowl
  • Step 2
    Stir in condensed milk and mayonnaise, whisking until smooth. Stir in pineapple, cheese and pecans. Mix well
  • Step 3
    Pour into 9 X 12 casserole, cover and refrigeratr upt o 1 hours or until set.
