I went searching for a quick and easy summer salad that wasn't lettuce based, tasted great, and had at least some nutritional value. I found a couple that were ok but lacked at least one of the 3 requirements. So, I took a few of the ingredients from each and came up with my own salad. The result is a fruit salad full of flavor as well as refreshing on a hot summer day.

    20 oz pineapple tidbits
  • 3 can(s)
    15 oz mandarin oranges
  • 1 pkg
    24 oz cottage cheese
  • 1 pkg
    16 oz whipped topping
  • 2 pkg
    0.6 oz orange gelatin

How to Make Jody's Summertime Salad

Step-by-Step

  1. Put all ingredients into a large bowl and stir until combined thoroughly. Refrigerate overnight to give flavor a chance to reach it's peak. Serve cold.
