great for a crowd serves 24, may cut in half easily! A cool hit at pot luck dinners, YES, it has pasta in it!!

Ingredients

  • 1/2 cup sugar
  • 2 tablespoons flour
  • 2 - eggs beaten
  • 1 tablespoon lemon juice concentrate
  • 1 3/4 cups pineapple juice (use from canned pineapple using for salad)
  • 3 - 11 oz.cans mandarin oranges
  • 2 - 20 oz cans pineapple tidbits
  • 1 cup each mini marshmallows and coconut
  • 1 - 12 oz cool whip
  • 3/4 box acini de pepe pasta (16oz)
  • 1/2 teaspoon salt

How To Make italian fruit and pasta salad

  • Step 1
    In a saucepan, combine sugar, salt, flour; stir in juice & eggs. Cook slowly, stirring constantly until thick. Add lemon juice and cool. Meanwhile, boil pasta per instructions, drain, rinse with cool water. Place in a large bowl. Add cooled dressing. Cover and refrigerate overnight.
  • Step 2
    The next day: add drained fruits, coconut and mini marshmallows. Mix well. Add cream. Cover and place back in the refrigerator until ready to serve. So yummy! Can be kept one week to enjoy each day,
