Ingredients

  • 1 tablespoon all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tablespoons tapioca
  • 2 tablespoons apple cider vinegar
  • 1 can crushed pineapple, drained, reserve the juice (8 oz)
  • 2 red apples, unpeeled, cored and diced (preferably, honeycrisp, cosmic crisp, or pink lady (or your favorite red apple)
  • 2 Granny Smith apples, unpeeled, cored and diced
  • 2 cups peanuts, honey roasted preferred, if not available, use unsalted or salted (up to you)
  • 8 ounces frozen whipped topping, thawed

How To Make irene's favorite taffy apple salad

  • Step 1
    In a small saucepan, stir together flour, sugar, tapioca, vinegar, and reserved pineapple juice, and stir with a whisk to dissolve the flour.
  • Step 2
    Place the saucepan over medium heat and cook, stirring constantly, until thick.
  • Step 3
    Remove from heat; add to a medium to large-sized bowl and chill in the refrigerator.
  • Step 4
    Remove the bowl from the refrigerator once the tapioca mixture is chilled.
  • Step 5
    To the bowl, add the pineapple, apples, peanuts, and chilled tapioca mixture.
  • Step 6
    Fold in the thawed whipped topping.
  • Step 7
    Place the bowl back into the refrigerator to chill for at least one hour before serving.
