Ingredients
- 1 tablespoon all-purpose flour
- 1/2 cup granulated sugar
- 2 tablespoons tapioca
- 2 tablespoons apple cider vinegar
- 1 can crushed pineapple, drained, reserve the juice (8 oz)
- 2 red apples, unpeeled, cored and diced (preferably, honeycrisp, cosmic crisp, or pink lady (or your favorite red apple)
- 2 Granny Smith apples, unpeeled, cored and diced
- 2 cups peanuts, honey roasted preferred, if not available, use unsalted or salted (up to you)
- 8 ounces frozen whipped topping, thawed
How To Make irene's favorite taffy apple salad

Step 1In a small saucepan, stir together flour, sugar, tapioca, vinegar, and reserved pineapple juice, and stir with a whisk to dissolve the flour.

Step 2Place the saucepan over medium heat and cook, stirring constantly, until thick.

Step 3Remove from heat; add to a medium to large-sized bowl and chill in the refrigerator.

Step 4Remove the bowl from the refrigerator once the tapioca mixture is chilled.

Step 5To the bowl, add the pineapple, apples, peanuts, and chilled tapioca mixture.

Step 6Fold in the thawed whipped topping.

Step 7Place the bowl back into the refrigerator to chill for at least one hour before serving.
