My mom always made this for birthdays, Easter, Thanksgiving, Christmas...anytime the entire family got together for a special dinner. The fruits varied, depending on what was in season, what she happened to have on hand, or what looked good at the store the day she went shopping...but it was always delicious and it always began with pineapple and Jell-O vanilla pudding.
Pour the pineapple and juice in large mixing bowl. Add the pudding mix and stir until creamy. Stir in all the other fruit and gently stir and fold until it’s all covered with the delicious creaminess.
Cover with plastic wrap and refrigerate the salad for about 30 minutes until nicely chilled.
Mix powdered sugar and cinnamon in small bowl; set aside.
To serve, stir and spoon into individual serving dishes and sprinkle with Splenda-cinnamon mixture, if desired.
