A delightful version of the Waldorf salad, this light and easy mix will fit in with any meal for any occasion. My family loves different flavors of fresh vegetables and fruits so this one became a favorite.

Ingredients

  • 1/4 cup fresh lime juice
  • 1/4 cup stone ground mustard
  • 5 teaspoons honey
  • 2/3 cup olive oil, extra virgin
  • 1/4 teaspoon black pepper
  • 5 - celery stalks with leaves, sliced thinly on diagonal
  • 2 large granny smith apples, halved, cored and thinly sliced
  • 1 medium fennel, trimmed, thinly sliced, reserving 3 tablespoons of fennel fronds
  • 1/2 cup toasted walnuts

  • Step 1
    In a small mixing bowl whisk together lime juice, ground mustard, honey, olive oil and pepper to blend.
  • Step 2
    In a large bowl add celery, apples and fennel. Coarsely chop walnuts and add to salad. Add dressing in small amounts, just to coat. Toss to blend. Chop fennel fronds and sprinkle on top before serving.
