Green Apple Fennel and Walnut Salad with Honey Mustard Dressing
1/4 cfresh lime juice
1/4 cstone ground mustard
2/3 colive oil, extra virgin
1/4 tspblack pepper
5celery stalks with leaves, sliced thinly on diagonal
2 largegranny smith apples, halved, cored and thinly sliced
1 mediumfennel, trimmed, thinly sliced, reserving 3 tablespoons of fennel fronds
1/2 ctoasted walnuts
How to Make Green Apple Fennel and Walnut Salad with Honey Mustard Dressing
- In a small mixing bowl whisk together lime juice, ground mustard, honey, olive oil and pepper to blend.
- In a large bowl add celery, apples and fennel. Coarsely chop walnuts and add to salad. Add dressing in small amounts, just to coat. Toss to blend. Chop fennel fronds and sprinkle on top before serving.
