This is a very good brunch recipe & quantity is easily adjusted for a crowd.

Ingredients

  • 1 1/2 pounds chicken breasts, cooked and coarsely chopped
  • 1/4 cup chopped celery
  • 2/3 cup mayonnaise
  • 1 cup crushed pineapple well drained
  • 1 teaspoon cumin
  • 1 cup green grapes (halved or quartered if large)
  • 1/2 cup sweet relish
  • 6 cups chopped green leaf lettuce
  • 1/3 cup chopped macadamia nuts or pecans, optional
  • - salt & pepper to taste

How To Make fruited chicken salad

  • Step 1
    Mix chicken, celery, mayonnaise, pineapple, sweet relish and cumin in large bowl.
  • Step 2
    Season with salt and pepper to taste.
  • Step 3
    Add grapes to chicken last
  • Step 4
    Toss greens and arrange a single serving on each plate.
  • Step 5
    Top each serving with chicken mixture and a sprinkling of chopped nuts.
