  • FRUIT SALAD
  • 8 ounces can crushed pineapple drained. juice reserved for vinaigrette
  • 8 ounces whipped cream cheese
  • 1 cup sour cream
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 2 cups chopped fresh strawberries
  • 1/2 cup coconut
  • 1/2 cup chopped pecans
  • large romaine lettuce leaves
  • PINEAPPLE VINAIGRETTE
  • 1/3 cup pineapple juice
  • 2 tablespoons white wine vinegar
  • 1/2 cup olive oil
  • pinch of salt

How To Make fruit salad lettuce wrap w pineapple vinaigrette

  • Step 1
    Add the pineapple, cream cheese, sour cream, sugar and vanilla to a bowl. Beat with electric beater until well incorporated.
  • Step 2
    Fold in the strawberries, coconut, and nuts. Place in fridge for at least an hour.
  • Step 3
    Vinaigrette Mix the pineapple juice, vinegar and olive oil together in a mason jar. Shake well taste and adjust of salt.
  • Step 4
    To serve scoop the fruit salad into large romaine leaves and drizzle with viniagrette.
