Ingredients
- FRUIT SALAD
- 8 ounces can crushed pineapple drained. juice reserved for vinaigrette
- 8 ounces whipped cream cheese
- 1 cup sour cream
- 1/4 cup sugar
- 1/2 teaspoon vanilla
- 2 cups chopped fresh strawberries
- 1/2 cup coconut
- 1/2 cup chopped pecans
- large romaine lettuce leaves
- PINEAPPLE VINAIGRETTE
- 1/3 cup pineapple juice
- 2 tablespoons white wine vinegar
- 1/2 cup olive oil
- pinch of salt
How To Make fruit salad lettuce wrap w pineapple vinaigrette

Step 1Add the pineapple, cream cheese, sour cream, sugar and vanilla to a bowl. Beat with electric beater until well incorporated.

Step 2Fold in the strawberries, coconut, and nuts. Place in fridge for at least an hour.

Step 3Vinaigrette Mix the pineapple juice, vinegar and olive oil together in a mason jar. Shake well taste and adjust of salt.

Step 4To serve scoop the fruit salad into large romaine leaves and drizzle with viniagrette.
