This recipe comes from my mum-in-law. She made it and raved about it, so I took a copy home. And I DID like it, though we're not heavy fruit salad eaters. So I kept it. BUT, just so you understand, one batch makes a LOT. Double it only if you're trying to make a stand-alone snack for a whole school (ok, that's an exaggeration, but I ended up throwing some away because there was too much).

Ingredients

  • 4 oz
    frozen orange juice concentrate
  • 6 2/3 oz
    crushed pineapple in juice
  • 1/4 c
    sugar
  • 1
    banana
  • 1/3 c
    ginger ale
  • 16
    muffin cups (have extra on hand, just in case)
  • 1/4 c
    oil

How to Make Frozen Citrus Salad

Step-by-Step

  1. Mix orange juice, crushed pineapple, ginger ale, sugar, and bananas. Spoon into muffin cups. Freeze.
