Blue Ribbon Recipe

Ingredients

  • 1 package fresh cranberries, chopped
  • 1 cup sugar
  • 2 large oranges
  • 1 medium tart apple, shredded
  • 1/2 cup dates, chopped
  • 16 oz. packages cream cheese, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/3 cup pecans , chopped

How To Make frosty cranberry ambrosia

  • Step 1
    Fill muffin pans with 15-20 paper liners.
  • Step 2
    Chop cranberries fine put in a medium bowl, add sugar and let set till ready to combine ingredients.
  • Step 3
    chop one orange fine put in medium bowl, reserving juice.
  • Step 4
    Shred apple add to chopped orange.
  • Step 5
    Squeeze remaining orange. Add to reserved juice to make a total of 1/2 C. juice. Combine orange juice, cream cheese and vanilla, beat with a rotary beater till fluffy.
  • Step 6
    Stir the orange, apple, cranberries and dates into cream cheese mixture .
  • Step 7
    Whip cream till soft peaks form. Fold whipped cream into cream cheese mixture.
  • Step 8
    Fill paper lined muffin pans with mixture, sprinkle lightly with pecans and freeze.
