  • 1 c
  • 2 Tbsp
  • 1/2 tsp
  • 2 c
    pineapple juice
  • 2 large
    eggs beaten
  • 1 Tbsp
    lemon juice
  • 16 oz
    package acini di pepe psta
  • 3 can(s)
    11 oz. each mandarin oranges drained
  • 1 can(s)
    20 oz. crushed pineapple drained
  • 8 oz
    whip cream
  • 1 c
    mini marshmallows
  • 1 c
    shredded coconut

How to Make Frog Eye Salad


  1. In a sauce pan combine sugar, salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat and add the lemon juice and let come to room temp.
  2. Bring a large pot of salted water to a boil and cook the pasta until al dente drain and rinse in cold water.
  3. In large bowl combine the pasta, egg mixture and remaining ingredients. Refrigerate until chilled at least 4 hours or overnight.
