Great little salad without frogs! It's a very cool and refreshing dish that my sister introduced to me last year. She usually sends some over whenever she makes it. I don't make it often because my husband doesn't particularly care for it and I can't eat but so much! So there you go.

Ingredients
- 3/4 cup sugar
- 3/4 teaspoon salt
- 1/2 cup pineapple juice
- 1 tablespoon self-rising flour
- 1 - egg, beaten
- 1 teaspoon lemon juice
- 1/2 - bag of davinci (acini di pepe) pasta
- 2 small cans mandrain oranges, drained
- 4 ounces cool whip
- 1/4 cup fine coconut (optional)
How To Make frog-eye salad

Step 1In saucepan, combine first 5 ingredients & cook over medium heat until thickened. Remove from heat & add lemon juice; stir then let cool to rm temp.

Step 2Cook pasta, using pkg directions, then drain & gently mix with first mixture.

Step 3Add remaining ingredients and chill before serving.

Step 4FYI: The pasta is the frog eyes.
