curry & fruit chicken salad

I originally made this for a road trip with some of my girl friends to watch a boy's Frisbee tournament in Tally. Needless to say the boys found this and it was gone in no time. That was my first time making it and it was a huge hit plus it was toooo simple to make :-)

Ingredients
- 5 - chicken breast
- 1/2 cup celery, chopped
- 1 cup red grapes, cut in half
- 1/2 cup yellow onions, chopped
- 1/4 cup mayonnaise, light
- 1/2 cup yogurt, low-fat, plain
- 2 tablespoons curry powder
- 1 tablespoon garlic powder (not salt)
- dash cajun seasoning
- dash salt and pepper
How To Make curry & fruit chicken salad

Step 1Preheat oven to 350 degrees

Step 2Season Chicken with Salt and Pepper.

Step 3Bake Chicken for approx 1 hour. Make sure not to overcook chicken or it will be dry.

Step 4Let Chicken cool for about 10min. I advise removing it from original cooking dish.

Step 5Meanwhile, chop onions and celery and halve grapes (if your grapes are huge, you might want to quarter them)

Step 6Add mayo and yogurt into a bowl (the bowl that will house the final product). Mix well!!! ( I use yogurt to lighten the salad up while the mayo helps to keep it together)

Step 7Shred Chicken. Add to mayo and yogurt mixture.

Step 8Add all your seasonings. Use more or less depending on your own personal preference.

Step 9Add chopped onions, celery, and grapes to mixture. Mix well.

Step 10Chill mixture until cold and enjoy with bread or on top of mixed greens :-)
