curried chicken salad

A friend of mind made this very simply with out the fruit but I love chicken salad with fruit so I developed this recipe.

Ingredients
- - 2 cooked chicken breasts
- - 1 apple
- - 1 c seedless grapes (i usually mix red and green)
- - 1/2 c chopped celery
- - 1/2 c nuts (pecans or cashews)
- - 1/2 c mayo
- - 1/2 c butter (but plain yogurt might be good)
- - 1 chopped green onion
- - 1 toe minced garlic
- - 1 tsp curry powder (more or less to your taste)
- - salt
How To Make curried chicken salad

Step 1Make the dressing first. I put the ingredients into a processor because of the butter but if you use yogurt you would not have to do that. Mix well and set aside. This will help the flavors blend.

Step 2All these quantities are approximate, you may need more or less chicken. Dice the chicken into bite sized pieces. Do the same with the fruit and celery. I usually just halve the grapes.

Step 3Mix the dressing with the chicken, fruit and celery. Let sit in fridge till cold When you are ready to serve add the chopped nuts. You can serve as is, on a bed of lettuce or serve endive along side to wrap around each bite.
