This sweet treat is great on a hot day when you're looking for something refreshing but not too heavy. It's so simple to make, and you can doctor it up by adding different fruits to it as well.

Some may call this a cranberry glorified rice salad and others may call it a rice fruit salad. It's a sweet cream salad. The rice is barely noticeable and adds extra texture (kind of like tapioca). The cranberry sauce gives this side dish a Thanksgiving feel, but pineapple and mandarin oranges brighten it up to be able to enjoy it year-round.

Ingredients For cranberry rice salad

  • 2 c
    cooked rice ,cooled
  • 1/4 c
    sugar
  • 1 can
    whole berry cranberry sauce (16 oz)
  • 1 can
    crushed pineapple or pineapple tidbits, drained (20 oz)
  • 1
    mandarine oranges, drained (15 oz)
  • 1 pkg
    Cool Whip (8 oz)
  • 1 c
    chopped walnuts

How To Make cranberry rice salad

  • Rice, cranberry sauce, and sugar in a bowl.

    In a large mixing bowl, combine the cooked rice, whole cranberry sauce, and sugar.
  • Adding oranges, pineapple, and walnuts.

    Then add the mandarin oranges, crushed pineapple, and walnuts. Reserve a few oranges and walnuts for topping.
  • Folding in whipped topping.

    Fold in whipped topping.
  • All ingredients mixed together.

    Once it is mixed well, cover and chill.
  • A serving bowl of Cranberry Rice Salad.

    Serve chilled over lettuce leaves or just spoon into dessert bowls and enjoy.

    *optional* can sub pecans or dry roasted cashews in place of walnuts... or can leave the nuts out entirely if you choose.
