Originally saw this recipe among newspaper clippings some time ago. Tweaked through the years and came up with this. May be too late for this season but a great recipe to save for next summer. Fresh, sweet and easy, this could be done on an inside grill also. Enjoy!

Ingredients For connie's grilled watermelon salad

1 tablespoon plus 4 teaspoons extra-virgin olive oil

4seedless watermelon wedges (about 2 pounds)

4 cspring salad mix

2 ozhoney goat cheese
-
8 Tbspwhite balsamic glaze or honey
How To Make connie's grilled watermelon salad

1Preheat grill.

2Brush 1 tablespoon olive oil evenly over watermelon slices.

3Season with salt and pepper.

4Place melon on grill; grill 2-3 minutes on each side or until grill marks show.

5Divide salad blend on four serving plates.

6Top salad blend with melon, then goat cheese.

7Whisk remaining teaspoons oil and glaze (or honey) until blended.

8Drizzle glaze (honey) over salads.
