connie's grilled watermelon salad
Originally saw this recipe among newspaper clippings some time ago. Tweaked through the years and came up with this. May be too late for this season but a great recipe to save for next summer. Fresh, sweet and easy, this could be done on an inside grill also. Enjoy!

Ingredients
- - 1 tablespoon plus 4 teaspoons extra-virgin olive oil
- 4 - seedless watermelon wedges (about 2 pounds)
- 4 cups spring salad mix
- 2 ounces honey goat cheese
- 8 tablespoons white balsamic glaze or honey
How To Make connie's grilled watermelon salad

Step 1Preheat grill.

Step 2Brush 1 tablespoon olive oil evenly over watermelon slices.

Step 3Season with salt and pepper.

Step 4Place melon on grill; grill 2-3 minutes on each side or until grill marks show.

Step 5Divide salad blend on four serving plates.

Step 6Top salad blend with melon, then goat cheese.

Step 7Whisk remaining teaspoons oil and glaze (or honey) until blended.

Step 8Drizzle glaze (honey) over salads.
