My mother taught me to make Waldorf Salad and I used to make it every Thanksgiving. Adding chicken can make it a light summer lunch! And it's a great way to use up leftover chicken.

Ingredients

  • PREPARE APPLES
  • 6 - red delicious apples, cored, cut into bite-sized chunks
  • 1 - lemon, halved
  • DRESSING
  • 2 cups mayonnaise
  • 1 teaspoon lemon juice
  • 1 tablespoon sugar
  • INGREDIENTS
  • 1 - bag walnuts, chopped
  • 1 1/2 cups raisins
  • 2 - stalks celery, chopped
  • 1 1/2 cups chicken, cooked, cut into bite-sized chunks

How To Make chicken waldorf salad

  • Step 1
    Core the apples. Cut into bite-sized chunks. You can peel them, but I like to leave the peel on. It adds a nice color to the salad.
  • Step 2
    As you cut up the apple, place chunks in large bowl of water with juice of 1/2 lemon added to the water, to prevent browning.
  • Step 3
    In another bowl, combine mayonnaise, tsp. lemon juice & sugar. Mix well.
  • Step 4
    Drain apples.
  • Step 5
    Combine remaining ingredients with apples & mayo mixture.
  • Step 6
    Chill before serving.
