My mother taught me to make Waldorf Salad and I used to make it every Thanksgiving. Adding chicken can make it a light summer lunch! And it's a great way to use up leftover chicken.

Ingredients

  • PREPARE APPLES

  • 6
    red delicious apples, cored, cut into bite-sized chunks
  • 1
    lemon, halved
  • DRESSING

  • 2 c
    mayonnaise
  • 1 tsp
    lemon juice
  • 1 Tbsp
    sugar
  • INGREDIENTS

  • 1
    bag walnuts, chopped
  • 1 1/2 c
    raisins
  • 2
    stalks celery, chopped
  • 1 1/2 c
    chicken, cooked, cut into bite-sized chunks

How to Make Chicken Waldorf Salad

Step-by-Step

  1. Core the apples. Cut into bite-sized chunks. You can peel them, but I like to leave the peel on. It adds a nice color to the salad.
  2. As you cut up the apple, place chunks in large bowl of water with juice of 1/2 lemon added to the water, to prevent browning.
  3. In another bowl, combine mayonnaise, tsp. lemon juice & sugar. Mix well.
  4. Drain apples.
  5. Combine remaining ingredients with apples & mayo mixture.
  6. Chill before serving.
