This is a good way of getting even my grands to eat a salad for lunch. They love the pears and walnuts in the salad,

Ingredients

  • 2 slices grilled chicken breast
  • 3 cups fresh spinach
  • 1 slice peeled and sliced pear
  • 1 - handful of walnuts
  • 1 cup grated parmesan cheese
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil, light
  • 1 teaspoon local honey

How To Make chicken and pear salad

  • Step 1
    Grill chicken breast, cut into squares. In a Large salad bowl, mix freshly washed spinach, add chopped pears and walnuts. Add the sliced chicken breasts
  • Step 2
    Whisk the olive oil, vinegar and honey. Pour over top of salad bowl mixture and top with Parmesan
