This is such a good way to use up some of that leftover holiday turkey. It is great for lunch or a light supper.

  • 2 c
    turkey, cooked and diced
  • 1 can(s)
    8-oz unsweetened pineapple,tidbits/chunks,drain and save juice
  • 1/2 lb
    kraft caramels
  • 1 1/2 Tbsp
    apple cidar vinegar
  • 1/2 c
    sour cream
  • 1 1/2 c
    apples, diced, peeled or unpeeled your choice
  • 1 c
    celery, finely chopped
  • 1 c
    miniature marshmallows
  • 1/2 to 1 c
    pecans, chopped, toasted

How to Make Caramel Apple Turkey Salad


  1. In a saucepan simmer pineapple juice, caramels, and vinegar until caramels are melted. Set aside to cool. When cool add sour cream.
  2. In a large bowl combine turkey, apples, pineapple, celery, marshmallows and pecans. Pour caramel mixture over turkey mixture. Toss gently. Chill at least 1 hour or over night.
