This is such a good way to use up some of that leftover holiday turkey. It is great for lunch or a light supper.

Ingredients For caramel apple turkey salad

2 cturkey, cooked and diced

1 can8-oz unsweetened pineapple,tidbits/chunks,drain and save juice

1/2 lbkraft caramels
-
1 1/2 Tbspapple cidar vinegar
-
1/2 csour cream
-
1 1/2 capples, diced, peeled or unpeeled your choice

1 ccelery, finely chopped
-
1 cminiature marshmallows
-
1/2 to 1 cpecans, chopped, toasted
How To Make caramel apple turkey salad

1In a saucepan simmer pineapple juice, caramels, and vinegar until caramels are melted. Set aside to cool. When cool add sour cream.

2In a large bowl combine turkey, apples, pineapple, celery, marshmallows and pecans. Pour caramel mixture over turkey mixture. Toss gently. Chill at least 1 hour or over night.
