This is such a good way to use up some of that leftover holiday turkey. It is great for lunch or a light supper.

Ingredients

  • 2 cups turkey, cooked and diced
  • 1 can 8-oz unsweetened pineapple,tidbits/chunks,drain and save juice
  • 1/2 pound kraft caramels
  • 1 1/2 tablespoons apple cidar vinegar
  • 1/2 cup sour cream
  • 1 1/2 cups apples, diced, peeled or unpeeled your choice
  • 1 cup celery, finely chopped
  • 1 cup miniature marshmallows
  • 1/2 to 1 cups pecans, chopped, toasted

How To Make caramel apple turkey salad

  • Step 1
    In a saucepan simmer pineapple juice, caramels, and vinegar until caramels are melted. Set aside to cool. When cool add sour cream.
  • Step 2
    In a large bowl combine turkey, apples, pineapple, celery, marshmallows and pecans. Pour caramel mixture over turkey mixture. Toss gently. Chill at least 1 hour or over night.
