Ingredients

  • 2 cups cantaloupe, seeded, peeled and cut into bite-sized pieces
  • 2 cups English cucumber, peeled, quartered and sliced
  • 1/2 cup cherry tomatoes, washed and halved
  • 1/2 cup red peppers, cut into small pieces
  • 1/4 cup red onions, finely chopped
  • 1 cup Feta cheese, crumbled
  • 1/4 cup sunflower seeds
  • 3 cups romaine lettuce, washed and torn into small pieces.
  • 1/4 cup parsley (substitute cilantro or mint leaves), chopped

How To Make cantaloupe cucumber salad

  • Step 1
    In a large bowl, combine all the ingredients.
  • Step 2
    Toss and serve immediately. If using vinaigrette, use a light one.
