Ingredients For balsamic strawberry & arugula salad

  • FOR THE BALSAMIC VINAIGRETTE
  • 2 Tbsp
    balsamic vinegar
  • 6 Tbsp
    extra virgin olive oil
  • salt and pepper
  • SALAD
  • 1/2 pt
    fresh strawberries hulled and thinly sliced
  • 1 Tbsp
    balsamic vinegar
  • 3 oz
    fresh arugula
  • 1/2 c
    pecan pieces
  • 1/4 c
    crumbled goat cheese

How To Make balsamic strawberry & arugula salad

    For the vinaigrette. Place the vinegar in a bowl. With a whisk, whisk in the olive oil until emulsified. Season with salt and pepper. Set aside

    In a large bowl add the strawberries and toss with the 1 tbsp balsamic vinegar. Let marinate for 10 minutes.

    Add the arugula, pecans, and goat cheese. Drizzle vinaigrette over top and serve.
