This is a great delightful summer salad inspired by Mexican flavors. Crisp, bright, and clean!

Ingredients

  • 1 1/2 tablespoons fresh lime juice
  • 1 1/2 tablespoons fresh orange juice
  • 1/2 tablespoon honey
  • 2 tablespoons coconut milk
  • 1 tablespoon vegetable oil
  • 1 1/2 cups diced watermelon
  • 1 1/2 cups diced jicama
  • 3 tablespoons shredded coconut, toasted
  • 1/4 cup finely minced red onion
  • 1 - serrano pepper, seeded and finely minced
  • 3 tablespoons chopped fresh cilantro leaves (plus cilantro sprigs, for garnish)

How To Make baja watermelon & jicama salad

  • Step 1
    In a large mixing bowl, combine lime juice, orange juice, honey, coconut milk, and oil. Mix well. Add watermelon, jicama, coconut, onion, serrano, and cilantro; toss until well combined. Season, to taste, with salt and pepper. Serve room temperature or chilled. Garnish with cilantro sprigs.
