Ingredients
- 1 1/2 tablespoons fresh lime juice
- 1 1/2 tablespoons fresh orange juice
- 1/2 tablespoon honey
- 2 tablespoons coconut milk
- 1 tablespoon vegetable oil
- 1 1/2 cups diced watermelon
- 1 1/2 cups diced jicama
- 3 tablespoons shredded coconut, toasted
- 1/4 cup finely minced red onion
- 1 - serrano pepper, seeded and finely minced
- 3 tablespoons chopped fresh cilantro leaves (plus cilantro sprigs, for garnish)

- - - freshly ground black pepper
How To Make baja watermelon & jicama salad

Step 1In a large mixing bowl, combine lime juice, orange juice, honey, coconut milk, and oil. Mix well. Add watermelon, jicama, coconut, onion, serrano, and cilantro; toss until well combined. Season, to taste, with salt and pepper. Serve room temperature or chilled. Garnish with cilantro sprigs.
