This is a great delightful summer salad inspired by Mexican flavors. Crisp, bright, and clean!

Ingredients

fresh lime juice
1 1/2 Tbsp
fresh orange juice
1/2 Tbsp
honey
2 Tbsp
coconut milk
1 Tbsp
vegetable oil
1 1/2 c
diced watermelon
1 1/2 c
diced jicama
3 Tbsp
shredded coconut, toasted
1/4 c
finely minced red onion
1
serrano pepper, seeded and finely minced
3 Tbsp
chopped fresh cilantro leaves (plus cilantro sprigs, for garnish)

freshly ground black pepper

How to Make Baja Watermelon & Jicama Salad

Step-by-Step

  • 1In a large mixing bowl, combine lime juice, orange juice, honey, coconut milk, and oil. Mix well. Add watermelon, jicama, coconut, onion, serrano, and cilantro; toss until well combined. Season, to taste, with salt and pepper. Serve room temperature or chilled. Garnish with cilantro sprigs.
