Avocado and Corn Salad

With our sweet peaches and cream corn coming to our markets soon it is time to pull out salad recipes that have our home grown vegetables and fruit.

Ingredients

  • 6
    cobs corn husked and cooked
  • 1 1/4 c
    finely diced red onion
  • 2
    limes, juiced and zested
  • 1/2 c
    red pepper and orange pepper [each}
  • 3 lg
    avocados medium diced
  • 1/4 c
    fine chopped fresh cilantro
  • 1/2 c
    your choice of veg or fruit salsa
  • lemon juice, fresh
  • 3/4 c
    dry cranberries
  • 1 c
    salted pumpkin seeds

How To Make

  • 1
    Cook corn until kernels are tender..let cool then cut the kernels off the cob. Small dice the peppers.

    Soak the cranberries in apple or orange juice for 1/2 hour..dice red onion and place in small bowl and cover with lemon juice let sit for 15 minutes..drain.

    Add all the vegetables and fruit into salad bowl along with the nuts, lime zest and juice and nuts and refrigerate until ready to serve..You can add 1/4 cup of salad dressing of your choice before serving
