Ingredients
- 6 - cobs corn husked and cooked
- 1 1/4 cups finely diced red onion
- 2 - limes, juiced and zested
- 1/2 cup red pepper and orange pepper [each}
- 3 large avocados medium diced
- 1/4 cup fine chopped fresh cilantro
- 1/2 cup your choice of veg or fruit salsa
- - lemon juice, fresh
- 3/4 cup dry cranberries
- 1 cup salted pumpkin seeds
How To Make avocado and corn salad

Step 1Cook corn until kernels are tender..let cool then cut the kernels off the cob. Small dice the peppers.

Step 2Soak the cranberries in apple or orange juice for 1/2 hour..dice red onion and place in small bowl and cover with lemon juice let sit for 15 minutes..drain.

Step 3Add all the vegetables and fruit into salad bowl along with the nuts, lime zest and juice and nuts and refrigerate until ready to serve..You can add 1/4 cup of salad dressing of your choice before serving
