autumn apple salad

This recipe I got from a close friend of mine Matt whose mother used to make this salad for picnics and such. I fell in love it and asked her for the recipe. Times has passed by and I have lost touch with my friend but still think of him when I make this salad. We had alot of fun times together. Now, I have changed it up a bit but not much. I added more apples, cut back on the sugar, changed the cheese and sometimes I add more whipped topping but the flavor remains the same. It is a refreshing salad that has lots of texture to it. I just love the crunch of the apples and celery.

Ingredients

  • 2 medium organic apples, red delicious or your favorite --unpeeled and chopped
  • 1 cup diced celery
  • 1 can (20 oz.) crushed pineapple (undrained--unsweetened)
  • 1 package neufchatel cheese or cream cheese
  • 1/4 cup sugar
  • 1 package (3 oz.) lemon or lime gelatin
  • 1 cup chopped walnuts
  • 1 cup frozen whipped topping, thawed
  • GARNISH
  • - whipped topping, nuts & a dash of cinnamon

How To Make autumn apple salad

  • Step 1
    Bring pineapple and sugar to a boil and then boil for 3 minutes.
  • Step 2
    Remove from stove and stir in your jello till dissolved. Then stir in your cheese.
  • Step 3
    Let mixture cool and then fold in your apples, celery and whipped topping.
  • Step 4
    Fold in the nuts and you are ready to refrigerate till time to serve.
