This is the salad to accompany the Carmelized onion Tart I posted.
vinaigrette salad dressing (recipe follows)
fresh pear, sliced into 1/4 inch pieces
dried cranberries, to taste
good quality blue cheese, to taste, crumbled
fresh lemon juice
salt, to taste
How To Make
For the Vinaigrette:
Combine the balsamic vinegar,brown sugar, lemon juice, dijon mustard,salt and olive oil in blender and blend for a few seconds until well blended.
For the Arugula Salad:
Toss arugula in just enough vinaigrette to moisten the leaves. Add spiced pecans, pears and cranberries.
Place salad on each serving plate and set a wedge of tart over top. Sprinkle with crumbled blue cheese.
