Arugula Salad

This is the salad to accompany the Carmelized onion Tart I posted.


  •   1 bunch
    baby arugula
    vinaigrette salad dressing (recipe follows)
  •   1/3 c
    spiced nuts
  •   1
    fresh pear, sliced into 1/4 inch pieces
    dried cranberries, to taste
    good quality blue cheese, to taste, crumbled
  •   1/4 c
    balsamic vinegar
  •   1 Tbsp
    brown sugar
  •   1 Tbsp
    fresh lemon juice
  •   1 Tbsp
    dijon mustard
    salt, to taste
  •   3/4 c
    olive oil

How To Make

    For the Vinaigrette: Combine the balsamic vinegar,brown sugar, lemon juice, dijon mustard,salt and olive oil in blender and blend for a few seconds until well blended.

    For the Arugula Salad: Toss arugula in just enough vinaigrette to moisten the leaves. Add spiced pecans, pears and cranberries.
  • 3
    Place salad on each serving plate and set a wedge of tart over top. Sprinkle with crumbled blue cheese.
