This is the salad to accompany the Carmelized onion Tart I posted.

Ingredients

  • 1 bunch baby arugula
  • - vinaigrette salad dressing (recipe follows)
  • 1/3 cup spiced nuts
  • 1 - fresh pear, sliced into 1/4 inch pieces
  • - dried cranberries, to taste
  • - good quality blue cheese, to taste, crumbled
  • 1/4 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon dijon mustard
  • - salt, to taste
  • 3/4 cup olive oil

How To Make arugula salad

  • Step 1
    For the Vinaigrette: Combine the balsamic vinegar,brown sugar, lemon juice, dijon mustard,salt and olive oil in blender and blend for a few seconds until well blended.
  • Step 2
    For the Arugula Salad: Toss arugula in just enough vinaigrette to moisten the leaves. Add spiced pecans, pears and cranberries.
  • Step 3
    Place salad on each serving plate and set a wedge of tart over top. Sprinkle with crumbled blue cheese.
