Ingredients
- 1 bunch baby arugula
- - vinaigrette salad dressing (recipe follows)
- 1/3 cup spiced nuts
- 1 - fresh pear, sliced into 1/4 inch pieces
- - dried cranberries, to taste
- - good quality blue cheese, to taste, crumbled
- 1/4 cup balsamic vinegar
- 1 tablespoon brown sugar
- 1 tablespoon fresh lemon juice
- 1 tablespoon dijon mustard
- - salt, to taste
- 3/4 cup olive oil
How To Make arugula salad

Step 1For the Vinaigrette: Combine the balsamic vinegar,brown sugar, lemon juice, dijon mustard,salt and olive oil in blender and blend for a few seconds until well blended.

Step 2For the Arugula Salad: Toss arugula in just enough vinaigrette to moisten the leaves. Add spiced pecans, pears and cranberries.

Step 3Place salad on each serving plate and set a wedge of tart over top. Sprinkle with crumbled blue cheese.
