This is our familys' favorite salad. My mother makes this for all of our family holidays and gathering. She has pasted this down to me (being the only daughter).

Ingredients

  • 1 lb. box acini pepe macaroni - cooked according to package
  • 2 lg. cans crushed pineapple (drained - keep the juice)
  • 2 lg. cans manarin oranges (drained)
  • 1 lb. package colored marshmallows
  • 12 oz. large cool whip
  • 1 cup sugar
  • 3 - egg yolks

How To Make acini pepe macaroni salad

  • Step 1
    Put Cooked macaroni and pineapple into a large bowl.
  • Step 2
    In a Small saucepan, add sugar and pineapple juice, bring to a boil.
  • Step 3
    Take eggyolks, and slowly add a tablespoon of hot juice to the yolks... dont curdle the eggs. Add the yolks to the hot juice slowly. Then pour over the pasta and pineapple. Place in refridge. over night.
  • Step 4
    Before serving add the remaining ingredients. mix well. Note: this is a very large salad and is very easy to make half recipe.
