One day I had some left over chicken after to dinner the day before,I came up with this recipe by adding a few things to the chicken,and wow, every time I make this salad , people ask me for the recipe, it's that good.

  • 1/2 c
    finely chopped fresh spinach
  • 2/3 c
    non-fat yogurt
  • 1 Tbsp
    lemon juice
  • 1 tsp
    dry mustard
  • 1/4 c
    chopped green onion
  • 1 Tbsp
    chopped fresh dill or tarragon
  • 1/2 c
    chopped celery
  • 3 c
    cooked, diced chicken
  • 1
    apple. cored and diced
  • 1/2 c
    chopped walnuts
  • ·
    salt & pepper to taste

How to Make Walnut Chicken Salad


  1. This dish is great with crackers.
  2. Combine the spinach, yogurt, lemon juice, mustard, green oninon, herb and celery, and toss. Add chicken, apple and walnuts. Blend well, then season to taste with salt and pepper. Serve with cracker or on a sandwich .
