Ingredients

  • 1 1/2 c
    cooked, cubed chicken
  • 3 oz
    water chestnuts, thinly sliced, about 1/2 cup
  • 1/2 c
    seedless grapes
  • 2 Tbsp
    chopped celery
  • 1/3 c
    low calorie mayo
  • 2 Tbsp
    white wine vinegar
  • 1 Tbsp
    soy sauce
  • 1 tsp
    curry powder
  • 1 tsp
    ground ginger
  • 1 tsp
    grated onion
  • ·
    lettuce leaves

How to Make Summer Chicken Salad

Step-by-Step

  1. Combine chicken, water chestnuts, grapes and celery in small bowl and then mound on salad plate lined with lettuce leaves.
  2. Stir together the remaining ingredients and pour over salad.
