santa fe chicken salad
Where I used to live, there was a restaurant that made a wonderful salad with most of these ingredients. This is an embellished fusion version of it. If the chimichurri is made with cilantro, all the better!

Ingredients
- 2 cups chopped romaine lettuce
- 4 ounces grilled chicken breast or rotisserie chicken
- 1/4 cup black beans, canned
- 2 tablespoons frozen corn, thawed
- 1 tablespoon red onion, minced
- 4 - cherry tomatoes, halved
- 1/4 small avocado, diced
- 2 tablespoons cotija cheese, crumbled
- 1-2 teaspoon sour cream, lite or regular
- 1-2 teaspoon lime juice
- 1 tablespoon chimichurri sauce, taco sauce or favorite salsa
- crispy tortilla strips, or crumbled tortilla chips for garnish
How To Make santa fe chicken salad

Step 1Line large plate with romaine. Slice or shred chicken and place on lettuce.

Step 2Distribute beans, onions, corn, tomatoes and avocado over chicken. Sprinkle cotija cheese over top.

Step 3Thin sour cream with lime juice so it's pourable. Zig-zag sour cream across salad. Zig-zag chimichurri sauce across salad in opposite direction. Garnish with crispy tortilla strips.
