- 1 cup shredded chicken (from a roasted chicken or poached chicken breast)
- 3 tablespoons mayonnaise
- 2 pinches curry powder
- 1 tablespoon mango chutney
- 1 tablespoon raisins or diced dried apricots
How To Make quick coronation chicken

Step 1Mix the mayo, curry powder, chutney, and raisins (or dried diced apricots) together.

Step 2Add the diced or shredded chicken. Depending on how wet or dry you like the mixture, you can add more mayo. Salt and pepper to taste.

Step 3Use as a sandwich filler or on a hot jacket potato.
