Ingredients
- 2-3 large chicken breasts
- 1/2 lemon sliced
- 1 clove garlic, crushed
- lemon pepper seasoning on chicken
- enough chicken broth to poach chicken and more as needed
How To Make poached chicken for chicken salad

Step 1Pour enough chicken broth in a skillet to poach chicken -- extra broth as needed.

Step 2Slice 1/2 lemon and crush one large clove garlic. Add to pan along with chicken breasts.

Step 3Sprinkle top of chicken breasts with lemon pepper seasoning. Saute a few minutes and turn breasts -- add additional lemon pepper if desired.

Step 4Cook chicken on medium low heat until cooked through. Remove chicken and allow to cool completely. Shred chicken and make chicken salad with your favorite ingredients.
