There is a local country store that sells a homemade chicken salad that everyone brags about and my friends and family tell me this one is just as good! It is a perfect salad to take on a picnic, to a sick friend or neighbor, and just keep in the refrigerator as a quick lunch or snack.
Drain Chicken and flake the meat with a fork. Add lemon juice, sweet pickle relish, salt, and pepper. Add mayonnaise a couple of tablespoons at a time until you get the consistency you prefer. Stir in the pecans and mix well. Refrigerate overnight.
