Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by Janey and Booth Outlan.

Method:
Stove Top

Ingredients

  • 1 lb
    chicken breast
  • 3 c
    snow peas
  • VINAIGRETTE

  • 1/2 c
    orange juice
  • 1/4 c
    fresh lime juice
  • 1/2 c
    chicken broth
  • 1
    dollop of honey
  • 1 tsp
    soy sauce
  • 1/3 c
    olive oil

How to Make Orange Chicken Salad

Step-by-Step

  1. Poach chicken breasts, then slice into bite size pieces.
  2. Blanch snow peas and "julienne" (cut into thin slices).
  3. Vinaigrette: Reduce orange juice, lime juice, chicken broth and honey to a thick syrup; add soy sauce and olive oil.
  4. Heat up vinaigrette and pour over chicken and snow peas.
  5. Season with fresh ground pepper or white pepper. Serve garnished with orange zest and orange wedges.
