Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by Janey and Booth Outlan.

Stove Top


1 lb
chicken breast
3 c
snow peas


1/2 c
orange juice
1/4 c
fresh lime juice
1/2 c
chicken broth
dollop of honey
1 tsp
soy sauce
1/3 c
olive oil

How to Make Orange Chicken Salad


  • 1Poach chicken breasts, then slice into bite size pieces.
  • 2Blanch snow peas and "julienne" (cut into thin slices).
  • 3Vinaigrette: Reduce orange juice, lime juice, chicken broth and honey to a thick syrup; add soy sauce and olive oil.
  • 4Heat up vinaigrette and pour over chicken and snow peas.
  • 5Season with fresh ground pepper or white pepper. Serve garnished with orange zest and orange wedges.
