Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by Janey and Booth Outlan.

Ingredients

  • 1 pound chicken breast
  • 3 cups snow peas
  • VINAIGRETTE
  • 1/2 cup orange juice
  • 1/4 cup fresh lime juice
  • 1/2 cup chicken broth
  • 1 - dollop of honey
  • 1 teaspoon soy sauce
  • 1/3 cup olive oil

How To Make orange chicken salad

  • Step 1
    Poach chicken breasts, then slice into bite size pieces.
  • Step 2
    Blanch snow peas and "julienne" (cut into thin slices).
  • Step 3
    Vinaigrette: Reduce orange juice, lime juice, chicken broth and honey to a thick syrup; add soy sauce and olive oil.
  • Step 4
    Heat up vinaigrette and pour over chicken and snow peas.
  • Step 5
    Season with fresh ground pepper or white pepper. Serve garnished with orange zest and orange wedges.
