    chicken, cooked and diced
  • 1/4 c
    sour cream
  • 1/4 c
    mayonnaise
  • 1/4 c
    carrot, finely chopped

    cilantro

    capers, drained
  • 2 Tbsp
    red bell pepper, finely chopped
  • 2 Tbsp
    lemon juice
  • 1/2 tsp
    cumin, ground
  • 1/4 c
    onion, finely chopped
  • 1/4 c
    hot pepper sauce
  • 1
    avocado, peeled and sliced

    lettuce leaves
  • 1 tsp
    paprika

How to Make Mexican Chicken Salad

Step-by-Step

  1. Toss all ingredients except avocado, lettuce and paprika.
  2. When well mixed refrigerate, 30 minutes.
  3. Serve on lettuce leaves with avocado wedges.
  4. Sprinkle with paprika.
