Ingredients
- 1 jar marinated artichoke hearts, drained and cut into 1/2 inch pieces, reserve oil
- 2 cups grape or cherry tomatoes,halved
- 1 medium cucumber, quartered & cut in to 1/4 inch slices
- 1/4 cup feta cheese crumbles
- 1 1/2 teaspoons coarse kosher salt
- 3 medium boneless chicken breasts, grilled
- 3 tablespoons prepared peppercorn ranch style dressing
- 2 packages mixed greens (4 ounce)
- 1 tablespoon reserved artichoke oil
How To Make mediterranean artichoke chicken salad

Step 1In a large bowl, combine artichoke hearts, tomatoes,cucumber, feta cheese and kosher salt. Cut chicken up into pieces and add to, 1 tablespoon of reserved artichoke oil and ranch-style dressing, stir to combine mixture. Divide mixed greens among 4 plates and spoon salad mixture over top of greens.
