My whole family loves this- add some sourdough bread and you have a meal!

  •   1 jar(s)
    marinated artichoke hearts, drained and cut into 1/2 inch pieces, reserve oil
  •   2 c
    grape or cherry tomatoes,halved
  •   1 medium
    cucumber, quartered & cut in to 1/4 inch slices
  •   1/4 c
    feta cheese crumbles
  •   1 1/2 tsp
    coarse kosher salt
  •   3 medium
    boneless chicken breasts, grilled
  •   3 Tbsp
    prepared peppercorn ranch style dressing
  •   2 pkg
    mixed greens (4 ounce)
  •   1 Tbsp
    reserved artichoke oil

How To Make

  • 1
    In a large bowl, combine artichoke hearts, tomatoes,cucumber, feta cheese and kosher salt. Cut chicken up into pieces and add to, 1 tablespoon of reserved artichoke oil and ranch-style dressing, stir to combine mixture. Divide mixed greens among 4 plates and spoon salad mixture over top of greens.
