Ingredients For mandarin chicken salad

  • DRESSING
  • 1/2 c
    corn syrup
  • 3 Tbsp
    distilled white vinegar
  • 2 Tbsp
    pineapple juice
  • 1 Tbsp
    brown sugar
  • 1 Tbsp
    rice wine vinegar
  • 1 Tbsp
    soy sauce
  • 4 tsp
    sugar
  • 1 tsp
    sesame oil
  • 1/4 tsp
    ground mustard
  • 1/4 tsp
    ground ginger
  • 1/8 tsp
    salt
  • 1/8 tsp
    paprika
  • 1 dash
    garlic powder
  • 1 dash
    black pepper
  • 1/2 c
    vegetable oil
  • 1/2 tsp
    sesame seeds
  • SALAD
  • 4
    boneless skinless chicken breasts
  • vegetable oil
  • salt and pepper to taste
  • 4 c
    chopped red leaf lettuce
  • 1 lg
    head iceberg lettuce chopped
  • 1 can
    mandarin oranges drained
  • 1 c
    rice noodles
  • 1 c
    roasted almonds - sliced

How To Make mandarin chicken salad

    Combine all dressing ingredients except sesame seeds and oil in a blender

    Blend on high speed
  • 3
    While blending, slowly add vegetable oil
  • 4
    Add sesame seeds and blend 2-3 seconds

    Pour dressing into a covered container and refrigerate until needed

    Rub each chicken breast with oil then grill over medium flame until cooked

    Dice cooked chicken and chill

    Layer lettuces, chicken, oranges, rice noodles and almonds

    Serve with dressing
