Ingredients

  • DRESSING
  • 1/2 cup corn syrup
  • 3 tablespoons distilled white vinegar
  • 2 tablespoons pineapple juice
  • 1 tablespoon brown sugar
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon soy sauce
  • 4 teaspoons sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon salt
  • 1/8 teaspoon paprika
  • 1 dash garlic powder
  • 1 dash black pepper
  • 1/2 cup vegetable oil
  • 1/2 teaspoon sesame seeds
  • SALAD
  • 4 boneless skinless chicken breasts
  • vegetable oil
  • salt and pepper to taste
  • 4 cups chopped red leaf lettuce
  • 1 large head iceberg lettuce chopped
  • 1 can mandarin oranges drained
  • 1 cup rice noodles
  • 1 cup roasted almonds - sliced

How To Make mandarin chicken salad

  • Step 1
    Combine all dressing ingredients except sesame seeds and oil in a blender
  • Step 2
    Blend on high speed
  • Step 3
    While blending, slowly add vegetable oil
  • Step 4
    Add sesame seeds and blend 2-3 seconds
  • Step 5
    Pour dressing into a covered container and refrigerate until needed
  • Step 6
    Rub each chicken breast with oil then grill over medium flame until cooked
  • Step 7
    Dice cooked chicken and chill
  • Step 8
    Layer lettuces, chicken, oranges, rice noodles and almonds
  • Step 9
    Serve with dressing
