lemon gelatin

pineapple, crushed with juice
2 Tbsp
lemon juice
1/2 tsp
tarragon, crushed
white pepper
1.5 c
chicken breasts, cooked and cubed
1/2 c
parsley, chopped
1/4 c
red bell pepper, chopped

How to Make Lemony Chicken Salad


  • 1Bring chicken broth to a boil in small saucepan.
  • 2Completely dissolve gelatin in boiling broth; add water, pineapple, lemon juice, tarragon and white pepper.
  • 3Refrigerate until slightly thickened.
  • 4Stir in chicken, celery and red pepper.
  • 5Spoon into 4 individual plastic containers or serving dishes; refrigerate until firm, about 2 hours.
