Ingredients
- 13.75 ounces chicken broth, low salt
- 2 packages lemon gelatin
- 1 cup cold water
- 1 can pineapple, crushed with juice
- 2 tablespoons lemon juice
- 1/2 teaspoon tarragon, crushed
- pinch white pepper
- 1.5 cups chicken breasts, cooked and cubed
- 1/2 cup parsley, chopped
- 1/4 cup red bell pepper, chopped
How To Make lemony chicken salad

Step 1Bring chicken broth to a boil in small saucepan.

Step 2Completely dissolve gelatin in boiling broth; add water, pineapple, lemon juice, tarragon and white pepper.

Step 3Refrigerate until slightly thickened.

Step 4Stir in chicken, celery and red pepper.

Step 5Spoon into 4 individual plastic containers or serving dishes; refrigerate until firm, about 2 hours.
